4 large bell peppers (any color)

1 cup cooked rice (white or brown)

1 lb ground beef (or turkey/chicken for a lighter option)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

1 tsp chili powder (optional)

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preparation of Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the exteriors with olive oil and place them upright in a baking dish.

    Cook the Filling: In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onion until soft, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Brown the Meat: Increase the heat to medium-high, add the ground meat, and cook until browned, breaking it up with a spatula as it cooks. Drain any excess fat if necessary.

        Mix in Vegetables and Rice: Stir in the cooked rice, black beans, corn, diced tomatoes, cumin, paprika, chili powder (if using), salt, and pepper. Mix everything well and cook for an additional 2-3 minutes to heat through.

          Stuff the Peppers: Carefully spoon the filling into each bell pepper until they’re packed full. Leave a little room at the top as the filling may expand during cooking.

            Add Cheese & Bake: Top each stuffed pepper with a generous handful of shredded cheese. Cover the baking dish with aluminum foil and bake for 25-30 minutes.

              Finishing Touches: After baking, remove the foil and cook for an additional 10-15 minutes, or until the cheese is bubbly and golden. Optional: garnish with chopped cilantro or parsley before serving.
