1 tablespoon olive oil

1 pound ground beef (or turkey)

1 packet taco seasoning (or homemade seasoning)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 medium red bell pepper, diced

1 medium onion, diced

1 avocado, diced

1 lime, juiced

1 cup cherry tomatoes, halved

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Tortilla chips (optional, for garnish)

Instructions
 

Cook the Rice: In a medium pot, bring 2 cups of water to a boil. Add the long-grain rice, a pinch of salt, and reduce the heat to low. Cover and cook for about 18-20 minutes (or according to package instructions) until the rice is tender and has absorbed the water. Fluff with a fork and set aside.

    Sauté the Vegetables: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper; sauté for 4-5 minutes until the onion becomes translucent.
