Ingredients

1 lb ground turkey

1 tbsp olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

6 large tortilla wraps

1 cup shredded lettuce

1 medium tomato, diced

Salsa and sour cream for serving (optional)

Instructions

Cook the Turkey: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and garlic. Sauté for about 2-3 minutes until fragrant and softened.

Add Turkey: Increase the heat slightly, add ground turkey to the skillet, breaking it up with a spoon. Cook until browned on all sides, about 5-7 minutes.

Seasoning: Stir in the diced bell pepper, chili powder, cumin, paprika, salt, and pepper. Cook for another 3-4 minutes until the bell pepper is softened.

Mix in Other Ingredients: Add the rinsed black beans and corn kernels to the skillet, mixing well. Cook for an additional 2-3 minutes, allowing all the flavors to meld together. Remove from heat.

Assemble the Wraps: Warm the tortilla wraps in a dry skillet or microwave for a few seconds until pliable. On each tortilla, place a generous amount of the ground turkey filling, top with shredded lettuce, diced tomato, and a sprinkle of cheddar cheese.

Wrap It Up: Fold in the sides of the tortilla and roll it up tightly from the bottom to the top, securing all the fillings inside.

Serve: Slice the wraps in half and serve with salsa and sour cream on the side for dipping if desired.
