Ingredients

1 package fresh or frozen ravioli (cheese or spinach-filled)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Cook the Ravioli: In a large pot of salted boiling water, cook the ravioli according to package instructions. Fresh ravioli typically takes about 3-5 minutes to cook; frozen may take longer. Once cooked, reserve ½ cup of the pasta water, then drain.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for 2-3 minutes, allowing them to soften. Add the baby spinach and continue to sauté until it wilts down.

Make the Cream Sauce: Reduce the heat to low, then pour in the heavy cream. Add Italian seasoning, salt, and pepper. Stir well to combine, and let it simmer for about 3-4 minutes.

Combine Ravioli and Sauce: Add the cooked ravioli to the skillet, gently tossing to coat them in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust seasoning if necessary.

Serve: Plate the creamy Tuscan ravioli and garnish with fresh basil leaves. Serve immediately, and enjoy your delicious weeknight meal!
