Easy Zucchini Bars with Cinnamon Glaze

1/2 teaspoon salt

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1 cup powdered sugar

1 tablespoon milk (adjust for desired consistency)

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare Zucchini: Grate the zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels—this will help prevent sogginess in the bars.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the vegetable oil, eggs, and vanilla extract until smooth.
