2 medium zucchinis, grated

1 cup rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 cup walnuts or pecans, chopped (optional)

1/4 cup dark chocolate chips (optional)

Pinch of salt

Fresh fruit or yogurt for filling (such as strawberries, bananas, or Greek yogurt)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or cheesecloth, then place in a large mixing bowl.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, almond flour, baking soda, ground cinnamon, and a pinch of salt. If using nuts or chocolate chips, add them at this stage.

        Mix Wet Ingredients: In the bowl with the grated zucchini, add the melted coconut oil, honey (or maple syrup), and vanilla extract. Mix until well combined.

          Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring until everything is well incorporated. The mixture should be moist but not too sticky. If it feels too wet, you can add a little more almond flour.

            Form Cookies: Using a spoon or small ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly to form disc shapes.

              Bake: Bake in the preheated oven for 15-18 minutes, or until the cookies are golden brown on the edges.

                Cool: Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
