2 cups cooked rice (white or brown)

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese (divided)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for extra richness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Baking Dish: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli, cream of chicken soup, sour cream, ¾ cup of the cheddar cheese, garlic powder, onion powder, paprika, and salt and pepper. Stir until well combined.

        Transfer to Baking Dish: Pour the chicken and rice mixture into the prepared baking dish. Spread it out evenly.

          Top the Bake: Sprinkle the remaining ¼ cup of cheddar cheese over the top of the mixture. If you like a crunchy topping, sprinkle breadcrumbs over the cheese.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden, and the edges are lightly browned.
