Egg-In-A-Hole Breakfast Sandwich

Ingredients
  

2 slices of thick-cut bread (sourdough or brioche recommended)

2 large eggs

2 tablespoons unsalted butter, divided

2 slices of cheddar cheese (or your preferred cheese)

4 slices of cooked bacon or sausage patty (optional)

Salt and pepper, to taste

Fresh chives or parsley, finely chopped (optional, for garnish)

Instructions
 

Prepare the Bread: Use a round cookie cutter or a glass to cut a hole in the center of each slice of bread, creating a frame for the egg. Set the cutouts aside.

    Heat the Skillet: In a non-stick skillet or griddle, melt 1 tablespoon of butter over medium heat, allowing it to coat the bottom of the pan.

      Toast the Bread: Place the slices of bread in the skillet and cook for about 2-3 minutes until they start to turn golden brown. Flip the bread.

        Add the Cheese: On the toasted side of the bread, place a slice of cheese on each piece. If you’re using bacon or sausage, add those on top of the cheese.

          Crack the Eggs: Carefully crack an egg into the hole of each slice of bread. Season with salt and pepper to taste.

            Finish Cooking: Cover the skillet with a lid and let the eggs cook for about 4-5 minutes. This will allow the whites to set while keeping the yolk runny. If you prefer firmer yolks, cook for an additional minute or two.

              Complete the Sandwich: Once the eggs are cooked to your liking, use a spatula to carefully lift the sandwiches out of the skillet.
