2 large yellow onions

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1 egg

1 cup buttermilk (or milk + 1 tbsp vinegar)

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (optional for heat)

Salt and black pepper, to taste

Vegetable oil, for frying

Prep the Onions: Peel and slice the onions into thick rings, about ½ inch wide. Separate them carefully and set aside.

    Make the Batter: In a bowl, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another bowl, whisk together the egg and buttermilk.

      Coat the Rings: Take each onion ring and dip it into the flour mixture, ensuring it’s evenly coated. Next, dip it into the buttermilk mixture, allowing excess to drip off, and then coat it again in the flour mixture for the double crunch.

        Prepare for Frying: Spread the breadcrumbs on a plate. After the second flour coating, quickly roll the onion rings in the breadcrumbs, pressing gently to ensure they stick well.

          Heat the Oil: In a deep skillet or frying pan, pour in enough vegetable oil to cover the bottom, about ½ inch deep. Heat over medium-high heat until it reaches 350°F (175°C).
