2 large sweet onions (such as Vidalia), sliced into 1/4-inch thick rings

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spiciness)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

2 cups panko breadcrumbs

Oil for frying (vegetable or canola)

Optional: fresh parsley for garnish

Prepare the Onions: Peel the onions and slice them into 1/4-inch thick rings. Carefully separate the rings and set them aside in a bowl.

    Make the Batter: In a large mixing bowl, combine the all-purpose flour, baking powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir until well mixed.

      Add Buttermilk: Pour in the buttermilk and whisk until the batter is smooth and well combined. The batter should be thick enough to coat the onion rings without being too runny.

        Coat the Rings: Dip each onion ring into the batter, making sure it is evenly coated. Let any excess batter drip off before proceeding to the next step.

          Breadcrumb Coating: Place the panko breadcrumbs in a shallow dish. After coating the onion rings in the batter, immediately transfer them to the panko and press down gently to ensure they are thoroughly covered.
