Ingredients

1 lb boneless, skinless chicken breasts

4 cups fresh or frozen corn (about 4-5 cobs if fresh)

2 medium potatoes, diced (about 2 cups)

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 tsp dried thyme

1 tsp smoked paprika

½ tsp black pepper

Salt to taste

½ cup chopped fresh parsley (for garnish)

Optional: crumbled bacon for garnish

Instructions

Prep the Chicken: Start by seasoning the chicken breasts with salt and pepper. You can do this step right in the crockpot for convenience.

Combine Ingredients: In your crockpot, add the seasoned chicken breasts, diced potatoes, chopped onion, garlic, corn, chicken broth, thyme, and smoked paprika.

Cook on Low: Cover the crockpot with its lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: After cooking, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the chowder in the crockpot.

Add Cream: Stir in the heavy cream and let it cook for an additional 15-20 minutes on high. This step allows the flavors to meld together beautifully.

Adjust Seasoning: Taste the chowder and add salt and pepper as needed.

Serve: Ladle the corn chowder into bowls and sprinkle with chopped parsley. For an extra touch, you can top it with crumbled bacon.

Enjoy: Serve with warm crusty bread or crackers on the side to soak up all that delicious goodness!
