1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup powdered sugar

1/4 cup vanilla yogurt

1 teaspoon vanilla extract

For the Topping:

1 medium apple, sliced thinly

1 medium pear, sliced thinly

1 cup pomegranate seeds

1 cup mandarin orange segments (fresh or canned, drained)

1/4 cup chopped walnuts (optional)

1/4 teaspoon ground cinnamon (for sprinkling)

Drizzle of honey or maple syrup (optional)

Instructions
 

Prepare the Cookie Crust:

    - Preheat your oven to 350°F (175°C). Line a large pizza pan or baking sheet with parchment paper.

      - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

        - Beat in the eggs one at a time and add the vanilla extract; mix well.

          - In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet mixture and mix until just combined.

            - Spread the dough evenly onto the prepared pizza pan, smoothing it out with a spatula.

              Bake the Cookie Crust:

                - Bake for 15-18 minutes or until the edges are lightly golden and the center is set. Remove from the oven and let it cool completely on the pan.

                  Make the Cream Cheese Frosting:

                    - While the cookie crust cools, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese until smooth.

                      - Add the powdered sugar, vanilla yogurt, and vanilla extract. Mix until creamy and well combined.

                        Assemble the Fruit Pizza:

                          - Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the surface using a spatula.

                            - Arrange the sliced apples, pears, pomegranate seeds, and mandarin segments on top of the frosting in a beautiful pattern.

                              - If desired, sprinkle chopped walnuts, a hint of ground cinnamon, and a light drizzle of honey or maple syrup over the fruit toppings.

                                Serve and Enjoy:
