Family-Friendly Beef and Cheese Enchiladas

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) red enchilada sauce

1 cup corn (frozen or canned)

2 cups shredded cheddar cheese, divided

8 flour tortillas (10-inch size)

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef Mixture: In a large skillet, over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.

      Add Aromatics: Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, around 3-4 minutes.

        Mix Ingredients: Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until everything is well mixed and heated through.

          Prepare Tortillas: In a separate bowl, mix 3/4 cup of the enchilada sauce with 1 cup of shredded cheese. This will be your filling.

            Assemble Enchiladas: Pour a small amount of enchilada sauce on the bottom of a 9x13 inch baking dish. For each tortilla, add a generous scoop of the beef mixture and a spoonful of the cheese sauce, then roll it up tightly. Place seam-side down in the baking dish. Repeat until all tortillas are filled and placed in the dish.

              Top with Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle the remaining cheese on top to make it extra cheesy.

                Bake: Cover with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven, let cool slightly, and top with chopped cilantro. Serve warm with a dollop of sour cream if desired.
