1 cup orzo pasta

2 cups cherry tomatoes, halved

1 cup feta cheese, crumbled

1 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Cook the Orzo: Boil a pot of salted water. Add the orzo and cook according to package instructions until al dente, typically around 8-10 minutes. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prep the Vegetables: While the orzo is cooking, prepare the cherry tomatoes, cucumber, red onion, and olives. Make sure to chop everything to bite-sized pieces for easy mixing and eating.
