2 boneless, skinless chicken breasts

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

2 teaspoons sesame oil

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 cup sliced mushrooms (shiitake or cremini)

1 cup baby spinach

1 red bell pepper, thinly sliced

3 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon vegetable oil

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts, gochujang, soy sauce, and sesame oil. Let them marinate for at least 30 minutes in the refrigerator to infuse the flavors.

    Cook the Chicken: Heat the vegetable oil in a skillet over medium heat. Remove the chicken from the marinade (reserving the marinade for later) and cook for about 7-8 minutes on each side until fully cooked and a bit caramelized. Once done, remove from the skillet and let it rest for 5 minutes before slicing it into thin strips.

      Prepare the Broth: In a large pot, combine the chicken broth, reserved marinade, and minced garlic. Bring it to a gentle simmer over medium heat.

        Add the Noodles and Veggies: Once the broth is simmering, add the ramen noodles, sliced mushrooms, and red bell pepper. Cook according to the ramen noodle package instructions (usually about 4-5 minutes) until the noodles are tender.

          Finish with Cream and Spinach: Stir in the heavy cream and baby spinach, allowing the spinach to wilt in the hot broth. Season with salt and pepper to taste. Let it simmer for an additional 2-3 minutes.
