Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (or regular milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup Sriracha sauce (adjust to taste)

2 tablespoons maple syrup (or honey)

2 tablespoons olive oil

Optional: chopped green onions and sesame seeds for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Batter: In a large bowl, combine the flour, plant-based milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's completely coated. Shake off any excess batter, then place the florets on the prepared baking sheet in a single layer.

Bake the Cauliflower: Bake the cauliflower in the preheated oven for 20-25 minutes, or until they are golden and crispy.

Make the Sriracha Sauce: While the cauliflower is baking, prepare the sauce by mixing the Sriracha, maple syrup, and olive oil in a small bowl until well combined.

Coat with Sauce: Once the cauliflower bites are crispy, remove them from the oven and drizzle the Sriracha sauce over them. Toss gently to coat all the bites evenly.

Final Bake: Return the coated cauliflower to the oven and bake for an additional 10 minutes to caramelize the sauce slightly.

Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped green onions and sesame seeds if desired, and serve hot as a snack or appetizer.
