Ingredients
  

2 pounds of chicken drumsticks or thighs

1/2 cup soy sauce

1/2 cup vinegar (preferably cane or white vinegar)

1 cup water

1 onion, thinly sliced

6 cloves garlic, minced

2-3 bay leaves

1 tablespoon black peppercorns

2-3 tablespoons vegetable oil

1 tablespoon brown sugar (optional, for a hint of sweetness)

Salt and pepper to taste

Chopped green onions or cilantro for garnish (optional)

Steamed rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken with soy sauce, minced garlic, and sliced onion. Mix well to ensure all chicken pieces are covered in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for enhanced flavor.

    Sauté Aromatics: In a wide pot or dutch oven, heat the vegetable oil over medium heat. Once hot, add the sliced onion and sauté until translucent and fragrant, about 3-4 minutes.

      Brown the Chicken: Remove the chicken from the marinade (reserve the marinade for later) and add the pieces to the pot. Brown the chicken on all sides for about 5-7 minutes.

        Add Vinegar and Spices: Pour the vinegar over the browned chicken. Do NOT stir immediately. Allow the vinegar to boil for about 3-5 minutes—this helps to cook off the strong vinegar taste.

          Combine Ingredients: After boiling, pour in the reserved marinade along with 1 cup of water, bay leaves, peppercorns, and brown sugar if using. Season with salt and pepper to taste.

            Simmer: Bring the mixture to a boil, then lower the heat and let it simmer uncovered for 30-40 minutes or until the chicken is tender and the sauce thickens slightly. Stir occasionally and adjust seasoning as needed.

              Final Touch: If you prefer a thicker sauce, you can remove the chicken once it's cooked and reduce the sauce to your desired consistency over medium heat for an additional 5-10 minutes, then return the chicken to the pot.

                Garnish and Serve: Serve hot over steamed rice, garnished with chopped green onions or cilantro if desired.
