1 can (15 oz) chickpeas, drained and rinsed

1 medium beet, roasted and peeled (or 1/2 cup pickled beets)

1/4 cup tahini

2 tablespoons fresh lemon juice (about 1 lemon)

1-2 cloves garlic, minced

1/3 cup extra virgin olive oil

Salt to taste

1/2 teaspoon ground cumin

1 tablespoon water (more if needed)

Fresh herbs (like parsley or dill) for garnish

Pita chips or veggie sticks for serving

Instructions
 

Prepare the Beet: If using a raw beet, preheat your oven to 400°F (200°C), wrap the beet in foil, and roast it for about 45-60 minutes until tender. Once cooled, peel it and chop it into chunks. If using pickled beets, simply drain them.

    Blend Ingredients: In a food processor, combine the rinsed chickpeas, roasted beets, tahini, lemon juice, minced garlic, ground cumin, and a pinch of salt. Blend until the mixture is smooth.

      Incorporate Olive Oil: With the food processor running, gradually pour in the olive oil. Continue to blend until the hummus is creamy. If it’s too thick, add 1 tablespoon of water at a time until your desired consistency is reached.

        Taste and Adjust: Taste your hummus and adjust the seasoning if necessary, adding more salt or lemon juice according to your preference.
