Ingredients

1 lb chicken breast, thinly sliced

2 tablespoons vegetable oil

2 cups broccoli florets

1 bell pepper, sliced (any color)

1 medium carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 inch ginger, grated

1/2 cup teriyaki sauce

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional for heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the sliced chicken with 2 tablespoons of teriyaki sauce, soy sauce, and a hint of ginger. Let it marinate for at least 15 minutes to enhance the flavor.

Prepare the Sauce: In a separate small bowl, mix the remaining teriyaki sauce with sesame oil and red pepper flakes, if using. Set aside.

Stir-Fry the Veggies: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 3-4 minutes until they are vibrant and tender-crisp. Transfer the vegetables to a plate and set aside.

Cook the Chicken: In the same skillet, add another tablespoon of vegetable oil. Once the oil is ready, add the marinated chicken along with minced garlic and grated ginger. Stir-fry the chicken until it’s browned and cooked through, about 6-8 minutes.

Combine and Finish: Return the vegetables to the skillet with the chicken. Pour the teriyaki sauce mixture over the stir-fry and toss everything together until evenly coated. Cook for an additional 2-3 minutes until everything is heated through.

Serve: Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot over a bed of rice or noodles if desired.
