1 cup almond flour

2 tablespoons coconut flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1/2 cup almond milk (or any milk of your choice)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

Coconut oil or butter, for cooking

Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, coconut flour, baking powder, baking soda, and salt. Whisk until well blended and free from lumps.

    Prepare Wet Ingredients: In a separate bowl, whisk together the eggs, almond milk, honey (or maple syrup), and vanilla extract until smooth.

      Combine Mixtures: Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix; some small lumps are okay.

        Heat the Pan: Place a non-stick skillet or griddle over medium heat. Add a small amount of coconut oil or butter to grease the pan.

          Cook the Pancakes: Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the pan. Cook for 2-3 minutes or until bubbles start to form on the surface and the edges appear set. Flip the pancake and cook for another 1-2 minutes until golden brown.
