1 cup rolled oats

1 ripe banana, mashed

1 cup milk (dairy or plant-based)

1/2 cup all-purpose flour (or whole wheat flour)

1 tablespoon baking powder

1 tablespoon brown sugar or honey (optional)

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1 large egg

2 tablespoons melted coconut oil or butter

Cooking spray or additional oil for the pan

Instructions
 

Blend the Oats: In a blender or food processor, blend the rolled oats until they reach a fine flour-like consistency. This will serve as the base for your pancake batter.

    Combine the Wet Ingredients: In a large mixing bowl, combine the mashed banana, milk, egg, and melted coconut oil or butter. Mix until it is well-combined.

      Mix Dry Ingredients: In another bowl, combine the oat flour, all-purpose flour, baking powder, brown sugar or honey (if using), salt, and cinnamon. Stir until evenly mixed.

        Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.

          Prepare the Pan: Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or oil.
