1 cup cottage cheese (preferably low-fat or fat-free)

6 large eggs

1 cup baby spinach, finely chopped

1/2 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

1/2 cup shredded low-fat cheddar cheese

1/4 teaspoon black salt (or regular salt)

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Optional toppings: chopped fresh herbs (like chives or parsley), additional cheese, or avocado slices

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with silicone or paper liners for easy removal.

    Whisk Wet Ingredients: In a large mixing bowl, combine the cottage cheese and eggs. Whisk them together until smooth and well blended.

      Incorporate Veggies and Seasoning: Add the chopped baby spinach, bell pepper, onion, shredded cheddar cheese, black salt, black pepper, garlic powder, and onion powder to the egg mixture. Stir until all ingredients are evenly distributed.

        Fill Muffin Tin: Carefully pour the egg mixture into the prepared muffin tin, filling each cup about three-quarters full. Leave a little space at the top, as they will expand while baking.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are puffed and lightly golden on top. A toothpick should come out clean when poked in the center.
