1 lb beef stew meat, cut into bite-sized pieces

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups beef broth

1 cup egg noodles

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

2 tablespoons olive oil

Salt and pepper to taste

1 cup Gruyère cheese, shredded (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Season the beef stew meat with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.

    Cook the Onions: In the same pot, add the remaining tablespoon of olive oil. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.

      Add Garlic and Seasoning: Once the onions are caramelized, add the minced garlic, thyme, and Worcestershire sauce. Stir for an additional minute until fragrant.
