Ingredients

2 cups fresh cherries, pitted and halved

3 large eggs

1 cup whole milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1 cup all-purpose flour

1/4 teaspoon salt

1 tablespoon unsalted butter (for greasing the dish)

Powdered sugar (for serving, optional)

Fresh mint leaves (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Generously grease a 9-inch round baking dish or a 10-inch cast-iron skillet with the butter, ensuring the sides are well-coated.

Arrange the Cherries: Place the pitted and halved cherries evenly in the bottom of the greased baking dish.

Make the Batter: In a mixing bowl, whisk together the eggs and granulated sugar until well combined. Then, add in the whole milk, vanilla extract, and almond extract, and mix until smooth.

Incorporate Dry Ingredients: Sift the all-purpose flour and salt into the egg mixture, whisking until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Pour the Batter: Gently pour the batter over the arranged cherries in the baking dish, ensuring they are evenly covered.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the clafoutis is puffed up and golden brown. A toothpick inserted in the center should come out clean.

Cool Slightly: Remove the clafoutis from the oven and let it cool for about 10 minutes. It will deflate slightly as it cools.

Serve: Dust the top with powdered sugar, if desired, and garnish with fresh mint leaves for a pop of color. Serve warm or at room temperature.

Enjoy: Slice into wedges and savor the delightful mix of creamy custard and tart cherries!
