4 medium ears of fresh corn, husked

1 cup cherry tomatoes, quartered

1 small red onion, finely diced

1 red bell pepper, diced

1 jalapeño pepper, seeded and finely chopped (adjust to taste)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tsp ground cumin

Salt and pepper to taste

12 small tortilla cups (store-bought or homemade)

Avocado slices for garnish

Prepare the Corn: Bring a large pot of salted water to a boil. Add the husked corn and cook for about 5-7 minutes until tender. Remove from water and allow to cool. Once cool, cut the kernels off the cobs and place them in a mixing bowl.
