2 medium beets, roasted and diced

1 large cucumber, diced

1/4 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon honey or maple syrup

Salt and pepper to taste

1/2 teaspoon cumin (optional)

Prepare the Beets: Begin by roasting the beets. Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until a fork easily pierces through. Let them cool, peel the skins, and then dice into bite-sized cubes.
