2 ripe mangoes, diced

1 cup red cabbage, finely shredded

1 cup cooked black beans (canned or freshly cooked)

1 avocado, sliced

½ cup fresh cilantro, chopped

1 small red onion, diced

2 medium jalapeños, thinly sliced (adjust to taste)

Juice of 2 limes

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

Olive oil for cooking

Prepare the Mango Salsa: In a medium bowl, combine the diced mangoes, red onion, jalapeños, half of the cilantro, and the lime juice. Season with salt and pepper. Mix gently and set aside to allow the flavors to meld.

    Season the Black Beans: In a small saucepan over medium heat, combine the black beans, ground cumin, chili powder, and a splash of lime juice. Stir for about 5 minutes or until heated through. Adjust seasoning with salt and pepper if necessary.

      Warm the Tortillas: Heat a skillet over medium heat and lightly brush both sides of the corn tortillas with olive oil. Warm each tortilla for about 30 seconds on each side until they are pliable.

        Assemble the Tacos: Lay the warm tortilla flat, and start layering with a generous spoonful of seasoned black beans, followed by the mango salsa, a few slices of avocado, and a sprinkle of the remaining cilantro.
