Ingredients

4 ripe peaches, diced

1 medium fresh mozzarella ball, diced

1/4 cup fresh basil leaves, thinly sliced

2 tablespoons balsamic vinegar

1 tablespoon honey

1 clove garlic, minced

1 French baguette, sliced into 1/2-inch thick pieces

Olive oil for drizzling

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Peach Topping: In a medium mixing bowl, combine the diced peaches, mozzarella, and fresh basil. Add the balsamic vinegar, honey, and minced garlic. Season with salt and pepper to taste. Gently toss all ingredients together until well-combined. Set aside to let the flavors meld.

Toast the Baguette Slices: Arrange the baguette slices on a baking sheet. Drizzle a light amount of olive oil over each slice. Toast in the preheated oven for about 5-7 minutes, or until golden and crisp.

Assemble the Bruschetta: Remove the toasted baguette slices from the oven. Spoon the peach mixture generously on top of each slice.

Garnish and Serve: Drizzle a little more balsamic vinegar on top for an extra burst of flavor, if desired. Optionally, you can add a sprinkle of extra basil or even some crushed red pepper flakes for a kick. Serve immediately while the bread is warm.
