2 cups fresh peaches, sliced (about 4-5 medium peaches)

1 tablespoon lemon juice

1/4 cup granulated sugar (plus extra for sprinkling)

1 tablespoon cornstarch

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 sheet of refrigerated pie crust or homemade pâte brisée

1 egg (beaten), for egg wash

Prepare the Peaches: In a large bowl, combine the sliced peaches, lemon juice, 1/4 cup granulated sugar, cornstarch, vanilla extract, cinnamon, and nutmeg. Gently stir to combine and let it sit for about 15 minutes to allow the flavors to meld and the fruit to release some juices.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Roll Out the Crust: On a lightly floured surface, roll out the pie crust into a rough circle, about 12 inches in diameter. Transfer the rolled-out crust to a parchment-lined baking sheet.

        Assemble the Galette: Spoon the peach mixture into the center of the pie crust, leaving about a 2-inch border around the edges. Gently fold the edges of the crust over the peaches, pleating and pinching to create a rustic look. Make sure the center remains open to show off the beautiful peaches.

          Add Finishing Touches: Brush the exposed crust with the beaten egg for a golden finish. Sprinkle a bit of sugar on top of the crust to add crunch and sweetness.

            Bake: Bake the galette in the preheated oven for 30-35 minutes, or until the crust is golden brown and the peaches are bubbling.
