Ingredients
  

1 cup jasmine rice

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (red or yellow), diced

1 avocado, sliced

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

½ cup fresh cilantro, chopped

¼ cup feta cheese, crumbled (optional)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

1 teaspoon ground cumin

Optional toppings: sliced radishes, jalapeño slices, or pumpkin seeds

Instructions
 

Cook the Rice: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the jasmine rice, reduce heat to low, cover with a lid, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let sit covered for 5 minutes.

    Prepare the Vegetables: While the rice is cooking, prepare your vegetables. Dice the cucumber, bell pepper, and slice the avocado. Halve the cherry tomatoes and prepare the corn (if using fresh, cook it briefly until tender; if frozen, thaw and drain).

      Mix the Dressing: In a small bowl, whisk together lime juice, olive oil, smoked paprika, ground cumin, salt, and pepper. Adjust seasoning to taste.

        Assemble the Bowl: Fluff the cooked jasmine rice with a fork and place it at the bottom of each serving bowl. Top the rice with fresh veggies - distribute the cherry tomatoes, cucumber, bell pepper, corn, and black beans evenly.

          Add Avocado & Cilantro: Carefully add the sliced avocado on top of the vegetable layer and sprinkle with chopped cilantro. If you desire, add crumbled feta cheese for a creamy touch.

            Drizzle Dressing: Pour the lime-cumin dressing over each bowl generously, allowing it to soak into the rice and veggies.
