4 small whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup cooked chicken, shredded (optional)

1 cup fresh spinach, chopped

1 small zucchini, grated

1 large carrot, grated

½ cup cherry tomatoes, halved

¼ cup corn kernels (fresh or canned)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Salsa or guacamole for serving (optional)

Instructions
 

Prep the Veggies: In a mixing bowl, combine the grated zucchini, carrot, chopped spinach, corn kernels, and halved cherry tomatoes. Season with garlic powder, onion powder, salt, and pepper. Mix well.

    Assemble the Quesadillas: Take one tortilla and sprinkle half of it with a generous layer of mozzarella cheese. Add a layer of the veggie mixture over the cheese, followed by shredded chicken if using. Top with another layer of mozzarella cheese. Fold the tortilla in half to create a half-moon shape.

      Cook Quesadillas: Heat olive oil in a large skillet over medium heat. Carefully place the quesadilla in the skillet. Cook for 3-4 minutes until the bottom is golden and crispy. Flip and cook the other side for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.

        Slice and Serve: Carefully remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with salsa or guacamole on the side for dipping.

          Repeat: Repeat steps 2-4 for the remaining tortillas and filling ingredients.
