1 cup cornmeal

1/2 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

1 large egg

1 cup corn kernels (fresh, frozen, or canned)

1/4 cup chopped green onions

1/2 cup shredded cheese (optional, like cheddar or pepper jack)

Vegetable oil for frying

Instructions
 

In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and black pepper. Whisk together until well mixed.

    In a separate bowl, whisk together the buttermilk and egg until smooth. Gradually add this wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

      Fold in the corn kernels, chopped green onions, and shredded cheese if using. The mixture should be thick and slightly chunky.

        Heat about 1/2 inch of vegetable oil in a deep skillet over medium heat. To test if the oil is hot enough, drop a small spoonful of batter into the oil; it should sizzle and rise to the surface.

          Once the oil is hot, use a tablespoon or small ice cream scoop to drop mounds of batter into the oil, making sure not to overcrowd the pan. Fry them in batches if necessary.

            Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

              Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
