Ingredients

2 large ripe bananas

1 cup coconut yogurt (dairy-free or regular)

2 tablespoons honey or maple syrup (to taste)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

1/4 cup dark chocolate chips (optional)

Pinch of salt

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/4-inch thick rounds. Lay them out in a single layer on a parchment-lined baking sheet.

Make the Yogurt Mixture: In a mixing bowl, combine the coconut yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until smooth and well combined.

Assemble the Rounds: Spoon about 1 teaspoon of the yogurt mixture onto each banana slice, spreading it gently to cover the top.

Add the Coconut Topping: Sprinkle the shredded coconut evenly over all the yogurt-topped banana slices. If desired, you can also melt the dark chocolate chips and drizzle a bit over the tops for an extra treat.

Freeze the Rounds: Carefully place the baking sheet in the freezer and freeze for about 2-3 hours or until the yogurt is completely firm.

Serve: Once frozen, remove the banana yogurt rounds from the parchment paper and serve immediately for a refreshing snack or dessert. Store any leftovers in an airtight container in the freezer for up to one week.
