Ingredients

2 ripe bananas

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/4 cup mini chocolate chips

1/4 cup crushed nuts (walnuts, almonds, or pecans)

1/4 cup diced strawberries

1/4 cup diced pineapple (fresh or canned)

1/2 teaspoon sprinkles (optional)

Whole wheat or gluten-free sandwich bread (8 slices)

Instructions

Prepare the Banana Mixture: In a mixing bowl, mash the ripe bananas until smooth. Add Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until fully combined.

Add the Fun Toppings: Gently fold in the mini chocolate chips, crushed nuts, diced strawberries, and diced pineapple into the banana-yogurt mixture. If using, sprinkle in the colorful edible sprinkles for a festive touch.

Assemble the Sandwiches: Lay out 4 slices of bread on a clean surface. Generously spread the banana-yogurt mixture on top of each slice. Place the remaining 4 slices of bread on top to create sandwiches.

Freeze the Sandwiches: Carefully wrap each sandwich in plastic wrap or parchment paper. Place them in the freezer for at least 2 hours or until completely frozen.

Slice and Serve: Once frozen, remove the sandwiches from the freezer and let them sit at room temperature for about 5 minutes to soften slightly. Slice each sandwich into quarters or halves, depending on your preference. Plate and enjoy your refreshing treat!
