Ingredients

2 cups mixed frozen berries (strawberries, blueberries, raspberries)

2 cups rolled oats

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup dark chocolate chips or cacao nibs (optional for topping)

Instructions

Prepare the Baking Sheet: Line a baking sheet (about 10x15 inches) with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine Greek yogurt, honey or maple syrup, vanilla extract, and cinnamon. Stir well until smooth.

Incorporate the Oats: Gradually fold in the rolled oats, mixing until they are fully coated in the yogurt mixture.

Add Berries: Gently fold in the frozen berries, being careful not to crush them too much to maintain some whole pieces for texture.

Add Nuts: Stir in the chopped nuts for an added crunch.

Spread the Mixture: Pour the oat and berry mixture onto the prepared baking sheet, spreading it evenly with a spatula to about 1/2 inch thickness.

Top with Chocolate Chips: If using, sprinkle dark chocolate chips or cacao nibs evenly over the top.

Freeze: Place the baking sheet in the freezer for at least 4 hours, or until completely frozen.

Cut and Serve: Once frozen solid, remove the bark from the baking sheet. Use a sharp knife to cut it into pieces or break it into chunks using your hands.

Store: Keep the pieces stored in an airtight container in the freezer for quick and convenient breakfast or snack options.
