For the crust:

1 cup all-purpose flour

1/2 cup powdered sugar

1/4 teaspoon salt

1/2 cup unsalted butter, melted

For the filling:

2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1/4 cup all-purpose flour

1/2 teaspoon baking powder

1 cup frozen blueberries (you can lightly thaw them for easier mixing)

For garnish:

Powdered sugar, for dusting

Fresh blueberries and lemon slices (optional)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the 1 cup flour, powdered sugar, and salt. Add the melted butter and stir until the mixture resembles wet sand. Press the mixture into the bottom of a greased 8-inch square baking pan. Bake for 15 minutes, or until lightly golden. Remove from oven and let it cool slightly.

    Make the filling: In a separate bowl, whisk together the eggs and granulated sugar until light and frothy. Stir in the lemon juice and lemon zest. In another bowl, whisk the flour and baking powder together, then gradually fold it into the egg mixture until well combined.

      Incorporate the blueberries: Gently fold in the frozen blueberries, being careful not to crush them.

        Combine and bake: Pour the blueberry filling over the pre-baked crust. Spread it evenly and return the pan to the oven. Bake for an additional 20-25 minutes, or until the filling is set and slightly puffed around the edges.

          Cool and freeze: Allow the bars to cool at room temperature for about 30 minutes. Then transfer them to the refrigerator to chill completely. Once chilled, you can freeze the bars if desired. Cut them into squares after they have cooled fully.

            Serve: Dust the chilled or frozen bars with powdered sugar before serving. For an extra touch, garnish with fresh blueberries and a slice of lemon for a beautiful presentation.
