Ingredients

2 cups fresh or frozen blueberries

2 cups Greek yogurt (plain or vanilla)

3 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

A pinch of salt

Optional: fresh mint leaves for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are well-coated and have a sandy texture.

Make the Filling: In another bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Stir until smooth and creamy. Adjust sweetness if desired.

Layer the Mixture: Take a mini muffin pan and line it with mini cupcake liners. Press a tablespoon of the graham cracker mixture into the bottom of each liner, creating a crust. Use the back of a teaspoon to pack it tightly.

Add the Yogurt Layer: Spoon the yogurt mixture over the crust, filling each liner about 2/3 full. Gently tap the pan on the counter to settle the mixture.

Top with Blueberries: Drop a few blueberries on top of the yogurt layer in each cup, gently pressing them down into the mixture to ensure they freeze well.

Freeze: Place the muffin pan in the freezer and freeze for at least 4-6 hours, or until solid.

Serve: Once frozen, gently remove the pie bites from the muffin pan and peel off the liners. Arrange them on a plate and garnish with fresh mint leaves if desired.

Enjoy: These Frozen Blueberry Yogurt Pie Bites are perfect for a refreshing treat on a warm day! Store any leftovers in an airtight container in the freezer.
