Ingredients

1 cup almond flour

1 cup unsweetened shredded coconut

1/4 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark chocolate chips (70% cocoa or higher)

1/4 cup sliced almonds

Sea salt (for sprinkling, optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and salt. Stir well until all ingredients are fully incorporated and form a sticky mixture.

Shape the Squares: Line an 8x8-inch square baking dish with parchment paper, allowing some paper to hang over the edges for easy removal. Press the almond mixture firmly and evenly into the bottom of the prepared dish to create a smooth base. Use a spatula or your fingers to ensure it’s packed tightly.

Chill the Base: Place the baking dish in the freezer for about 20-30 minutes, allowing the base to firm up.

Melt the Chocolate: While the base is chilling, melt the dark chocolate chips. You can do this using a double boiler or by microwaving them in 30-second increments, stirring in between until smooth.

Assemble: Remove the baking dish from the freezer. Pour the melted chocolate over the chilled almond-coconut base, spreading it evenly with a spatula. Sprinkle sliced almonds over the melted chocolate, gently pressing them in for better adhesion. If desired, sprinkle a pinch of sea salt on top.

Freeze Again: Return the dish to the freezer and let the chocolate set for at least 1-2 hours, or until completely firm.

Cut into Squares: Once set, remove the baking dish from the freezer using the parchment paper edges. Transfer the block to a cutting board and cut into squares or bars of your desired size.

Store and Serve: Store the frozen chocolate almond coconut squares in an airtight container in the freezer. Enjoy straight from the freezer for a refreshing treat!
