Ingredients

1 cup rolled oats

1 cup pitted dates (soaked in warm water for 10 minutes)

½ cup creamy peanut butter, plus extra for drizzling

1/3 cup honey or maple syrup

1 tsp vanilla extract

2 tbsp cocoa powder

½ cup dark chocolate chips (melted)

¼ tsp sea salt

¼ cup unsweetened almond milk (or any milk of choice)

Instructions

Prepare the Base: In a food processor, combine the rolled oats and soaked dates. Pulse until they form a sticky mixture. Add the creamy peanut butter, honey (or maple syrup), and vanilla extract. Blend until smooth and well-combined.

Create the Base Layer: Pour the mixture into a lined 8x8 inch (or similar size) baking dish. Spread evenly, pressing down firmly to create a solid base. Place in the freezer while you prepare the next layer.

Make the Chocolate Layer: In a medium bowl, mix the melted dark chocolate chips, cocoa powder, sea salt, and almond milk until smooth. You want a nice, pourable consistency.

Combine Layers: Remove the dish from the freezer and pour the chocolate mixture over the oat base, smoothing it out evenly with a spatula.

Swirl the Peanut Butter: Warm a couple of tablespoons of peanut butter (you can microwave it for about 15 seconds) until it's pourable. Drizzle it over the chocolate layer, and use a toothpick or knife to create swirls throughout the chocolate.

Freeze: Cover the baking dish with plastic wrap or foil and place it in the freezer for at least 2-3 hours, or until completely set.

Cut and Serve: Once firm, lift the bars out of the dish using the parchment paper. Cut into squares or rectangles as desired. Serve immediately or store in an airtight container in the freezer.

Enjoy: These bars can be enjoyed straight from the freezer or let sit for a few minutes at room temperature for a softer bite!
