1 teaspoon pure vanilla extract

1/2 cup shredded unsweetened coconut

Pinch of sea salt

Optional toppings: dark chocolate chips, crushed nuts, or extra shredded coconut

Instructions
 

Combine Ingredients: In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup (or honey), vanilla extract, and a pinch of sea salt until well combined.

    Let Sit: Allow the mixture to sit for about 10 minutes. This helps the chia seeds absorb the liquid and thicken the mixture.

      Stir Again: After the resting period, stir the mixture once more to ensure the chia seeds are evenly distributed.

        Add Coconut: Fold in the shredded coconut to the mixture, ensuring it is evenly mixed throughout.

          Prepare Molds: Spoon the mixture into silicone molds or ice cube trays, filling them about 3/4 full to allow for expansion.
