Frozen Greek Yogurt Cinnamon Toast Cups

2 cups Greek yogurt (plain or vanilla)

3 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon (plus extra for topping)

1 cup granola (your choice, preferably cinnamon-flavored)

1 apple, diced (or your choice of mixed berries)

1/4 cup walnuts or pecans, chopped (optional)

Cooking spray or muffin liners for cups

Prepare the Muffin Tin: Lightly grease a muffin tin with cooking spray or place muffin liners in each cup for easy removal.

    Mix the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, honey or maple syrup, vanilla extract, and ground cinnamon until well combined and smooth.

      Layer the Ingredients: Spoon a generous dollop of the yogurt mixture into each muffin cup, filling them about halfway.

        Add Granola and Fruit: Sprinkle a layer of granola over the yogurt in each muffin cup, followed by a layer of diced apple (or berries). You can add more yogurt on top if you'd like a balanced layering effect.

          Finish it Off: Top the cups with another layer of yogurt, smoothing the top. Sprinkle some chopped walnuts or pecans if using, and a pinch more of cinnamon on top for extra flavor.

            Freeze: Place the muffin tin in the freezer and allow to freeze for about 4-6 hours, or until completely solid.

              Serve: Once frozen, remove the cups from the muffin tin by gently pulling on the muffin liners or running a knife along the edges. Serve immediately, or store in an airtight container in the freezer for up to 2 weeks. Enjoy!
