2 ripe mangoes (peeled, pitted, and diced)

1 cup of Greek yogurt (plain or vanilla)

1/4 cup of honey (adjust to taste)

1 tablespoon of lime juice

1 teaspoon of vanilla extract (optional)

A pinch of salt

1/4 cup of granola or coconut flakes (for topping, optional)

Fresh mint leaves (for garnish, optional)

Prepare the Mango Puree: In a blender or food processor, combine the diced mangoes, lime juice, and a pinch of salt. Blend until smooth and creamy. Taste and adjust the sweetness by adding more honey if desired.

    Mix the Yogurt Mixture: In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until well combined. The mixture should be smooth and creamy. Taste again and adjust honey to your preferred sweetness.

      Layering the Mixtures: In a silicone mold or a square/baking dish lined with parchment paper, pour half of the yogurt mixture into the bottom. Spread it evenly using a spatula.

        Add Mango Puree: Pour the mango puree over the yogurt layer, spreading it evenly to create a vibrant layer of mango.

          Top with Remaining Yogurt: Pour the remaining yogurt mixture on top of the mango layer. Use a toothpick or skewer to gently swirl the mixtures together for a marbled effect, if desired.

            Add Toppings: Sprinkle granola or coconut flakes over the top, if using. You can gently press them down to embed them in the yogurt.
