Ingredients

2 ripe mangoes, peeled and diced

1 cup coconut milk (full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Fresh mint leaves for garnish (optional)

Instructions

Blend the Mango: In a blender, add the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if needed.

Pour and Fill: Pour the mango-coconut mixture into ice cube trays or silicone molds. Leave a little space at the top of each compartment to allow for expansion as they freeze.

Freeze: Place the filled trays in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

Unmold: Once frozen, gently remove the cubes from the trays. If you're having trouble, you can run warm water over the bottom of the tray for easier release.

Serve: Place the frozen mango coconut cubes in a serving bowl. Optionally, garnish with fresh mint leaves for a vibrant touch.

Enjoy: These cubes can be eaten as a refreshing snack, blended into smoothies, or used as a tropical topping for desserts!
