Ingredients

2 ripe mangoes, peeled and diced

1 cup fresh pineapple chunks

1 cup coconut milk (canned or carton; sweetened or unsweetened based on your preference)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lime juice

Pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Fruit: Begin by peeling and dicing the mangoes. Remove the skin and core from the pineapple and cut it into chunks if you haven't done so already.

Blend Ingredients: In a blender, combine the diced mangoes, pineapple chunks, coconut milk, honey (or maple syrup), lime juice, and a pinch of salt. Blend until smooth and creamy.

Taste and Adjust: Taste the mixture and adjust the sweetness or lime juice if needed. You want a balanced tropical flavor.

Pour into Molds: Carefully pour the blended mixture into popsicle molds, leaving a little room at the top for expansion. If you don't have molds, small paper cups and wooden sticks can work as a substitute.

Insert Sticks: If using traditional molds, insert the popsicle sticks. If using cups, insert a stick into the center of each cup.

Freeze: Place the molds or cups in the freezer. Allow them to freeze for at least 4-6 hours, or until completely solid.

Remove and Enjoy: Once frozen solid, run warm water over the outside of the popsicle molds for a few seconds to loosen them. Gently pull out the pops and enjoy immediately! Optionally, garnish with fresh mint leaves for a refreshing touch.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 6 pops
