Ingredients

2 cups ripe mango chunks (fresh or frozen)

1 ½ cups plain Greek yogurt

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lime juice

Zest of 1 lime

½ teaspoon vanilla extract

Pinch of salt

Optional toppings: shredded coconut, chopped nuts, or granola

Instructions

Prepare the Mango: If using fresh mangoes, peel and dice them into chunks. If using frozen mango chunks, let them thaw slightly before measuring.

Blend the Mixture: In a blender or food processor, combine the mango chunks, Greek yogurt, honey (or maple syrup), lime juice, lime zest, vanilla extract, and a pinch of salt. Blend until you achieve a smooth consistency, scraping down the sides as needed.

Taste and Adjust: Taste the mango-yogurt mixture and adjust the sweetness if desired by adding more honey or syrup. Blend again briefly to incorporate.

Prepare the Mold: Pour the mixture into silicone molds or a parchment-lined baking dish. Spread it evenly using a spatula or the back of a spoon for an even thickness.

Add Toppings: If you like, sprinkle shredded coconut, chopped nuts, or granola on top for added texture and flavor.

Freeze: Cover the molds or baking dish with foil or a lid, and place them in the freezer. Freeze for at least 4 hours or until fully set.

Serve: To remove the bars from the molds, briefly run warm water over the outside of the molds before gently pulling them out. If using a baking dish, let sit at room temperature for a few minutes, then cut into bars.

Enjoy: Serve the frozen mango yogurt bars immediately or store them in an airtight container in the freezer for up to 2 weeks.
