Frozen Mocha Banana Yogurt Truffles

2 large ripe bananas, mashed

1 cup Greek yogurt (plain or vanilla)

1 cup dark chocolate chips

2 tablespoons instant coffee granules

2 tablespoons cocoa powder

1 tablespoon honey or maple syrup (optional for sweetness)

½ teaspoon vanilla extract

Pinch of salt

½ cup crushed nuts or chocolate sprinkles (for rolling)

In a large mixing bowl, combine the mashed bananas, Greek yogurt, instant coffee granules, cocoa powder, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Mix well until the ingredients are fully blended and smooth.

    Once the mixture is smooth, cover the bowl and place it in the freezer for about 30 minutes to firm up.

      While the mixture is firming, melt the dark chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring in between, or use a double boiler on the stove until smooth.

        Once the banana-yogurt mixture has set in the freezer, take it out and use a tablespoon to scoop out small portions and roll them into balls with your hands. Aim for about 1 inch in diameter.

          Dip each truffle into the melted chocolate, ensuring it is fully coated, then roll it in the crushed nuts or chocolate sprinkles for an added touch.

            Place the coated truffles onto a parchment-lined tray. Repeat the process until all the mixture is used.

              Once all truffles are coated, place them back in the freezer for at least 1-2 hours to fully set.
