Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (creamy or crunchy)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or your choice, optional)

1/2 cup unsweetened almond milk (or milk of your choice)

Instructions

Prepare the Base: In a mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix well until all the ingredients are thoroughly combined and form a thick paste. If it feels too thick, add a splash of almond milk until you reach a spreadable consistency.

Add Fun Mix-ins: Stir in the mini chocolate chips and chopped nuts, if using, for extra texture and flavor.

Line the Muffin Tin: Line a 12-cup muffin tin with silicone or paper liners to prevent sticking. This will make it easy to remove the cups once they are frozen.

Fill the Cups: Scoop the oat mixture into each muffin cup, filling them about 3/4 full. Press down gently with the back of a spoon to ensure they hold their shape when frozen.

Freeze the Cups: Place the muffin tin in the freezer and allow the cups to freeze for at least 2 hours or until they are solid.

Enjoy or Store: Once frozen, pop the oat cups out of the muffin tin and store them in an airtight container or a zip-top bag in the freezer. Enjoy them straight from the freezer as a quick snack or dessert!
