Frozen Pineapple Coconut Cups

2 cups fresh or frozen pineapple chunks

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon coconut extract (optional)

1/4 teaspoon salt

1/2 cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Pineapple: If using fresh pineapple, peel, core, and cut it into chunks. If using frozen, ensure it's slightly thawed for easier blending.

    Blend the Base: In a blender, combine the pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, coconut extract (if using), and salt. Blend until smooth and creamy. Taste and adjust the sweetness if necessary.

      Add the Coconut: Gently fold in the shredded coconut into the mixture, ensuring it's evenly distributed.

        Mold the Cups: Spoon the mixture into silicone cupcake liners or small cups about three-quarters full to allow expansion while freezing.

          Freeze: Place the filled cups in the freezer for at least 4 to 6 hours, or until completely set.

            Serve: To serve, run the outside of the silicone liners under warm water for a few seconds to loosen the cups. Gently peel away the liners, and place the frozen cups on a serving platter.
