2 cups fresh or frozen pineapple chunks

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lime juice

1/2 teaspoon salt

1/4 cup unsweetened shredded coconut (optional)

1/4 cup chopped nuts (such as almonds or macadamia nuts, optional)

Instructions
 

Prepare the Pineapple Puree: If using fresh pineapple, peel and chop it into chunks. In a blender or food processor, add the pineapple chunks and blend until smooth. Set aside about 1/2 cup of pineapple puree for swirling later.

    Combine Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, lime juice, and salt. Whisk until the mixture is well combined and smooth.

      Mix Pineapple and Yogurt: Gently fold the remaining pineapple puree into the yogurt mixture. Be careful to keep some texture; it shouldn't be completely blended.

        Create the Swirl: Take the set-aside pineapple puree and drop spoonfuls over the pineapple yogurt mixture. Use a skewer or a knife to gently swirl the puree through the yogurt without fully mixing, creating a marbled effect.

          Add Extras (Optional): If desired, sprinkle in the shredded coconut and chopped nuts, folding them gently into the mixture.

            Transfer to Pan: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal. Pour the pineapple yogurt mixture into the prepared dish and spread it evenly.

              Freeze the Bars: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until the mixture is fully set.

                Slice and Serve: Once frozen, lift the bars out of the dish using the parchment paper overhang. Place on a cutting board and slice into squares or bars. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

                  Garnish (Optional): For a tropical touch, consider garnishing with extra coconut flakes or a drizzle of honey before serving.
