For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

½ cup unsalted butter, melted

For the Filling:

2 cups mini marshmallows

1 ½ cups milk chocolate chips (or dark chocolate, if preferred)

1 cup heavy cream

For the Topping:

½ cup mini marshmallows (for toasting on top)

¼ cup additional chocolate chips (for sprinkle)

2 tablespoons crushed graham crackers

Instructions
 

Make the Crust:

    In a medium mixing bowl, combine the graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until the crumbs are evenly coated and crumbly. Press the mixture firmly into the bottom of a 9x9-inch baking pan to form an even layer. Set aside.

      Prepare the Filling:

        In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and stir in the milk chocolate chips until smooth and melted. Fold in the mini marshmallows, allowing some to stay whole for added texture.

          Assemble the Bars:

            Pour the chocolate-marshmallow mixture over the graham cracker crust, spreading evenly. Sprinkle more mini marshmallows on top, pushing them gently into the filling. Cover with plastic wrap and freeze for at least 4 hours or until solid.

              Toast the Marshmallows:

                Once frozen, take the bars out of the freezer. Use a kitchen torch to gently toast the mini marshmallows on top until golden brown. (If you don't have a torch, you can briefly place them under a broiler on a baking sheet. Watch closely to avoid burning!)

                  Cut and Serve:

                    Remove the bars from the pan using the edges of the plastic wrap. Cut into squares or rectangles. Sprinkle with additional chocolate chips and crushed graham crackers before serving.

                      Storage:

                        Keep any leftovers in an airtight container in the freezer. They can be enjoyed directly from the freezer for a cool treat!
